REPORTS TO:     VAST General Manager (GM)

STATUS:           Exempt

 

SUMMARY:

Assists the General Manager in all aspects of managing restaurant operations in an upscale/fine dining establishment, including but not limited to scheduling and maintaining staffing pars, managing the reservation system and the flow of service, training and coaching staff, and addressing guest concerns.

 

RESPONSIBILITIES:

  • Performs all job duties with the goal of maximizing superior guest service in a world-class setting. Ensures a congenial dining room atmosphere and that guest service standards are enforced. Must  be able to handle all guest service issues in an immediate and gracious manner. Promptly reports all guest service issues to the Restaurant GM.
  • Facilitates staff briefings prior to all shifts. Must be a subject matter expert on all menu items and general guest information. Assists in training and coaching staff and serves as an example and mentor by conducting himself/herself in a professional manner with the awareness that all actions and communications are within the view of both staff and guests.
  • Maintains current knowledge of Company and departmental policies and procedures and communicates expectations to staff.
  • Ensures restaurant facilities are maintained and cleaned according to our highest standards. Reports all maintence requests in a timely manner. Participates in daily safety and cleanliness inspections.
  • Assists the GM with managing the reservation system, flow of service, staff scheduling, schedule adjustments, and attendance notices.
  • Offers input to the GM on the work performance of the staff and assists the GM with staff training, the completion of staff performance improvement plans, performance evaluations and staff meetings.
  • Maintains good communication and teamwork with all staff, peers and supervisors.
  • Performs duties of Host, Server and Server Assistance, Food Runner when needed.
  • Encourages staff to embrace the Mission and Values of the Company. Displays a passion for restaurant/hospitality, guest service and quality improvement. Upholds the attitude that we have never truly “arrived” because we are always striving to enhance the overall dining experience, quality, guest service, efficiency and revenue.
  • Performs any and all tasks requested by the GM. Tasks and responsibilities may be added or revised based on the volume of business and the need for the work to be completed at the present time. 

 

KNOWLEDGE, SKILLS AND ABILITIES:

  • Must be able to work a flexible schedule including nights, weekends and holidays.
  • Ability to organize and prioritize under pressure.
  • Knowledgeable of computer operations.
  • Ability to adapt to change, new situations, changes in staffing and procedures.
  • Ability to absorb large amounts of information quickly: service procedures, menus, and dining room floor plans.

 

EXPERIENCE:

  • Previous restaurant management experience in an upscale casual or fine dining environment required.

 

PHYSICAL DEMANDS

  • Ability to walk and stand throughout an eight-hour shift.
  • Ability to lift, balance and carry large, oval dining room service trays.
